Pretty In Pink Peppermint Cupcakes

Ingredients:

  • 1 package white cake mix
  • 1 1/3 cups water
  • 3 large eggs
  • 2 tbsp vege. oil
  • 1/2 tsp peppermint extract
  • 3 to 4 drops red liquid food coloring
  • 1 container perpared vanilla frosting

Directions:

  1. Preheat oven to 350*.
  2. Line muffin pan with pink or white paper liners
  3. Beat cake mix, water, eggs, oil ,peppermint extract and food coloring. with mixer at low speed for 30 seconds.
  4. Beat at medium speed for 2 minutes
  5. Spoon batter into prepared cups filling 3/4 full.
  6. Bake 20 to 22 minutes.
  7. Cool in pans for 12 minutes
  8. Remove cupcakes to racks and cool
  9. Spread cupcakes with frosting top with crushed candies.
