Ingredients:

Directions:

  1. Combine flour, parsley, baking powder, salt and onion powder.
  2. Stir in eggs and mashed potatoes, mixing well.
  3. Heat 1 1/2 inches of oil to 365ºF degrees.
  4. Using about 1 well rounded tablespoon for each, drop potato mixture into hot oil a few at a time.
  5. Fry for 3 to 4 minutes or until golden brown.
  6. Drain on paper towel.
