Portuguese Corn Bread for the Bread Machine (Broa)

Ingredients:

  • 1 cup yellow cornmeal (1 1/2 cups)
  • 1 1/4 cups cold water, divided (1 3/4 cups)
  • 1 1/2 tsp active dry yeast (2 1/4 teaspoons)
  • 1 1/2 cups bread flour (2 1/4 cups)
  • 2 tsp sugar (1 tbsp)
  • 3/4 tsp salt (1 1/4 tsp)
  • 1 tbsp olive oil (1 1/2 tbsp)

Directions:

  1. Stir cornmeal into 1/2 (or 3/4) cup of the cold water until lumps disappear.
  2. Add all ingredients to your bread machine in the order recommended by its manufacturer, and select the bread cycle.
