  1. To make the dough:
  2. Crumble yest into bowl and add 225ml lukewarm water. Add sugar, salt, olive oil and flours. Mix.
  3. Knead the dough until elastic (springs back if pressed with finger). Sprinkle a little flour over dough and leave to rise in a bowl covered, until doubled in size.
  4. Heat the oven 250c. Divide the dough into 2 pieces. Mash the sardine, garlic, oregano, ICBINB and 3/4 of the parmesan.
  5. Roll the dough into 2 thin rectangles. Spread the sardine mixture over the dough and sprinkle with remaining cheese. Brush one long side with water, and roll the other long side towards it to make a sausage. Seal the edge.
  6. Cut the sausage shape intoo slices, transfer to a baking parchment covered tray. Shape into rounds, bake for about 10 minutes or until golden.
