Pineapple-Applesauce-Pumpkin Muffins

Ingredients:

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp clove
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1/4 cup canola oil
  • 1/4 cup applesauce
  • 2 eggs

Directions:

  1. Preheat oven to 400 degrees. Spray a mini muffin pan with nonstick cooking spray. Set aside.
  2. In a large bowl, combine first 8 ingredients.
  3. In a separate bowl, combine oil, applesauce, pineapple, eggs, and pumpkin.
  4. Add to dry ingredients and stir just to combine.
  5. Spoon a rounded tablespoon into each muffin cup.
  6. Bake for 12 - 14 minutes.
