Pecan Spice Muffins

Ingredients:

  • 1 1/2 cup. oil
  • 2 tsp. cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 4 eggs
  • 1 1/2 tsp orange extract
  • 1 1/2 tsp. baking soda
  • 2 cup. sugar
  • 2 cup. flour
  • 1 8 oz bag chopped pecans

Directions:

  1. Preheat oven to 350 degrees.
  2. Beat eggs until fluffy.
  3. Add oil and extract and beat well.
  4. Sift dry ingredients together and add to egg mixture.
  5. Add nuts and mix well.
  6. Spoon into lightly greased muffin pan and bake at 350 degrees for 30 minutes or until toothpick inserted in center comes out clean.
