Pecan Crisp Acorn Squash

Ingredients:

  • 2 (1 lb) acorn squash
  • 1/3 cup pecans , coarsley chopped
  • 1/3 cup melted butter
  • 3 tbsp brown sugar , packed
  • 1/4 tsp ground nutmeg
  • 1 dash chili powder

Directions:

  1. Cut each squash in half, scooping out seeds and membranes.
  2. Place the squash cut side down in a microwave safe dish. Add 1/2 inch of water to the dish and microwave on high for 12-15 minutes or until squash is tender. Cool slightly.
  3. Combine crackers through cinnamon in a bowl.
  4. Cut each squash half into 2 equal pieces.
  5. Fill each squash piece with the combined ingredients.
  6. Bake at 375 degrees for 20 minutes or until stuffing is melted and lightly browned.
