Ingredients:

Directions:

  1. Wash 8-10 pint jars in hot soapy water or in dish washer.
  2. Keep hot until needed.
  3. Prepare lids as manufacturer directs.
  4. Place in a 6-quart pot.
  5. Pour orange juice over fruit.
  6. Stir in orange peel, sugar, spices and seed of vanilla bean.
  7. Use a hand blender if need be to get a nice smooth puree.
  8. Stirring constantly over medium heat, bring to a boil.
  9. Ladle into hot jars 1 at a time, leaving 1/4 inch headspace.
  10. Release trapped air.
  11. Wipe rim of jars with a clean damp cloth.
  12. Attach lid.
  13. Place in canner.
  14. Process in a boiling-water bath.
  15. For 15 minutes.
