Ingredients:

  • 2 cups pancake mix
  • 2 tbsp sugar
  • 2 eggs
  • 1 (12 oz) can evaporated milk
  • 1/2 cup water
  • 1 tsp vanilla

Directions:

  1. Heat griddle and prepare with cooking spray.
  2. In a bowl, combine pancake mix and sugar.
  3. In another bowl, whisk together eggs and peanut butter. Gradually whisk in milk, water and vanilla.
  4. Combine the peanut butter mixture and pancake mixture.
  5. Pour 1/4 cup batter per pancake on hot griddle.
  6. Cook 1-2 minutes per side until golden brown.
