Ingredients:

Directions:

  1. Preheat oven to 350 degrees F.
  2. Grease and flour a 9 X 13 inch cake pan
  3. In the bowl of an electric mixer, cream the butter and sugar at medium speed about 2 minutes
  4. With the mixer on low speed, add vanilla, eggs and peanut butter and mix until blended
  5. In a medium bowl, whisk together the flour, baking soda and salt
  6. With the mixer on low speed, slowly add the flour mixture and mix until just combined
  7. Mixture will be fairly dry
  8. Spread approximately 2/3 of the dough into the prepared pan and press evenly into the bottom
  9. Spread the jam evenly over the dough
  10. Sprinkle the peanuts evenly over the jam
  11. With fingers, crumble the remaining dough evenly over the jam
  12. Bake at 45 minutes or until golden brown
  13. Cool completely before cutting into squares
