Pea and Cilantro (Coriander) Soup

Ingredients:

Directions:

  1. Melt the margarine over a gentle heat (or add olive oil) and sweat the onion, garlic and chilli for 3-4 minutes.
  2. Add the peas and cover with stock.
  3. Bring to the boil and simmer for 7-8 minutes.
  4. Add the freshly chopped cilantro (coriander) and blend until smooth.
  5. Season with salt and pepper and add a pinch of sugar to enhance the flavour.
