Pastry Cream ( for Filling Eclairs and Fruit Flans)

Ingredients:

  • 2 eggs
  • 50 g flour
  • 500 ml milk

Directions:

  1. Whisk the eggs and sugar in a bowl until almost white.
  2. Mix in the flour and custard powder.
  3. Boil the milk in a thick based pan.
  4. Whisk onto the egg mixture, mix well.
  5. Return to the heat and stir to the boil. Add the vanilla.
  6. Remove from the heat and pour into a basin. Stir occasionaly to avoid a skin forming on the surface of the pastry cream.
  7. Cool, and use as needed.
