Pasta with Dried Mushrooms and Tomato Sauce

Directions:

  1. Hydrate mushrooms for 30 minutes in hot water. Strain, reserving the soaking liquid, and measure out 1/4 cup. Rinse mushrooms and coarsely chop.
  2. Heat a large pot of water for the pasta. Heat oil in a large skillet, add shallots and saute about 3 minutes over medium heat. Add garlic and saute about 1 minute. Add tomatoes and their juice, 1/4 cup mushroom liquid, and thyme. Stir, boil, then simmer over medium heat, stirring often until sauce is thick and fragrant - about 20 minutes. Add pepper and adjust seasoning to taste.
  3. Cook pasta and drain, reserving 1/4 cup cooking water. Stir the water into the mushroom sauce. Toss the pasta in the sauce and serve.
