Ingredients:

  • 1 (16 oz) package ziti pasta
  • 2 zucchini , cut into strips
  • 2 red peppers , cut into strips
  • 2 cups chopped fresh tomatoes (canned will do)
  • 2 cups milk
  • 1/2 tsp nutmeg
  • 1/4 tsp ground pepper
  • 2 (10 oz) packages each frozen choppen spinach (thawed and drained well)

Directions:

  1. Cook pasta as directed and drain. Spoon into prepared 13x10x2 in baking dish (spray with olive oil).
  2. Saunted veggies in oil for 3 or 4 minutes.
  3. Add tomatoes.
  4. Spoon all over pasta.
  5. Place flour in the skillet.
  6. Blend in milk.
  7. Add broth, nutmeg and pepper.
  8. Cook and whisk over medium heat until mixture thickens.
  9. Add spinach.
  10. Pour over vegetables.
  11. Cover.
  12. Bake at 350 degrees for 40-45 minute.
