Ingredients:

Directions:

  1. Place sugar, butter, and yogurt into heavy-based saucepan.
  2. Stir over low heat until sugar is dissolved; bring to the boil.
  3. Boil without stirring until 239F or soft ball stage is reached.
  4. Remove from heat.
  5. Leave for 4-5 minutes.
  6. Stir in passion fruit concentrate and coconut cream and whip until mixture is thick and creamy.
  7. Pour into lightly buttered 8 x 8 pan.
  8. While still warm but firm, cut into squares.
  9. Leave until completely set before removing from tin.
