  1. DIRECTIONS:
  2. Heat a large soup pot over medium heat.
  3. Add olive oil and 3/4 of the onion. Saute until clear and add garlic and continue cooking for 3-4 more minutes.
  4. Add tomatoes. Add stock and raise heat to bubbling.
  5. Add salt and pepper to taste.
  6. Reduce heat to simmer and add bread and beans.
  7. Simmer until soup thickens.
  8. Adjust seasonings and bowl.
  9. Top with cheese, spoonful of onions and fresh basil. Serve.
