North Carolina Applesauce Muffins

Directions:

  1. Preheat oven to 350. Butter 24 small muffin tins. Cream butter and sugar. Add eggs one at a time. Stir in applesauce and spices. Sift together salt, soda and flour. Add to applesauce mixture and beat well. Stir in nuts. Fill muffin tins 2/3 full and bake for 8 to 10 minutes. Batter keeps well in refrigerator, and baked muffins freeze well (reheat before serving). Yields 24 small muffins.
