Directions:

  1. Put yeast, sugar and water in a glass bowl. Gently mix and leave until frothy - about 10 mins.
  2. Stir in the salt, egg and milk and incorporate the flour.
  3. Turn out onto a floured surface and knead for 6-8 mins.
  4. Put into an oiled bowl and leave to rise - about 1 hour.
  5. Punch down and knead in half of the garlic. Split into lumps about the size of a cricket ball and leave to doulble in size again, about 45 mins.
  6. Rollout into rounds and pull at one end to make a teardrop shape. Brush both sides with oil from bowl and sprinkle one side with garlic.
  7. Heat a griddle pan to very hot, then turn the heat down a bit.
  8. Place on pan garlic side up until it bubbles, about 2-3 mins, then turn over and cook other side.
  9. Serve warm with curry, raita and red salad.
