Ingredients:

Directions:

  1. Prepare 4 servings of couscous (usually about a cup dry) per package instructions
  2. On high heat, saute onion, carrots, sweet potato, zucchini, & turnups until 3/4 cooked for approx. 10 minutes.
  3. Reduce heat to medium & add chicken broth. Let mix simmer.
  4. Add spices, tomato paste, & chickpeas.
  5. Stir in cooked couscous. Cover & remove from burner.
  6. Can be garnished with golden raisins & nuts (pine nuts or almonds recommended) if desired.
