Ingredients:

Directions:

  1. Pastry:
  2. Mix dry ingredients in a bowl.
  3. Add butter, cutting in with a pastry blender or two knives until the mixture resembles cornmeal.
  4. Mix egg yolk with water and add to the mixture.
  5. Mix until dough sticks together in small clumps.
  6. Shape dough into a ball and wrap in cling film.
  7. Chill for 30 minutes.
  8. After chilling, roll out the pastry on a lightly floured work top..
  9. Line a pie pan with the rolled out dough.
  10. Trim and flute the edges
  11. Put the pan in the refrigerator to chill while making the filling.
  12. Filling:
  13. Melt the butter in a sauce pan.
  14. Add the chocolate, cocoa powder and coffee, stirring until the chocolate has melted.
  15. In a separate bowl beat eggs and sugar until creamy and blended. Add the sour cream, corn syrup and vanilla.
  16. Stir in the chocolate and butter mixture.
  17. Pour into the pastry shell and bake for 35 to 40 min until filling has puffed up and formed a crust.
  18. When done remove from oven and put on a rack to cool.
  19. Filling will drop and may crack a little as it cools down.
