Directions:

  1. Beat eggs slightly
  2. Add sugar to eggs, whisk slightly
  3. Add flour, stir
  4. Add melted butter, whisk slightly
  5. Add pineapple and coconut, stir
  6. Pour into pie shell
  7. Bake at 35O degrees until set and lightly browned
  8. NOTE: Mrs. Mitchell was a lovely lady and a wonderful cook. She was known for this pie!.
