  1. Heat oven to 400 degrees. Mix fruit, tapioca, sugar and extract in a bowl; let stand 15 minutes.
  2. Fill pastry-lined pie plate with fruit mixture. Dot with margarine. Cover pie with a top crust; seal and flute edges. Cut several slit to permit steam escape. Bake for 1 hour or until juices form bubbles that burst slowly. Cool.
  3. Variation: For a golden top crust, brush with beaten egg before baking.
