Milk Chocolate Florentine Cookies

Ingredients:

  • 2/3 cup butter
  • 2 cups quick oats
  • 1/4 cup milk
  • 1/4 tsp salt

Directions:

  1. Preheat oven to 375 degress F.
  2. Line baking sheets with foil
  3. Melt butter in a medium saucepan; remove from heat, stir in oats, sugar, flour,corn syrup, milk and vanilla and salt; mix well
  4. Drop by level teaspoons, about 3 inches apart, onto prepared baking sheets
  5. Spread thinly with a rubber spatula
  6. Bake for 6 to 8 minutes or until golden brown.
  7. Cool completely on baking sheets on wire racks, peel foil from cookies.
  8. Microwave....... chocolate - morsels in a medium microwave safe bowl on med-high (70 % ) power for 1 minute; stir.
  9. Microwave at additional 10 to 20 seconds intervals , stirring until smooth and melted.
  10. Spread thin layer of melted chocolate onto the flat side of half the cookies, top with remaining cookie
  11. Makes 3-1/2 dozen sandwich cookies
