Microwave Tomato Sauce

Ingredients:

  • 20 -30 cherry tomatoes
  • 1 -2 tbsp soy sauce
  • 1/2 tsp oregano
  • 1 pinch sugar (optional)

Directions:

  1. Wash the cherry tomatoes and place in microwave safe dish with a lid (the lid is important!).
  2. Add the soy sauce and oregano.
  3. Cover and microwave on high for 5 minutes.
  4. Remove from microwave and mash any tomatoes left whole with a fork or a potato masher (not many are left whole as a rule).
  5. Taste and add sugar if needed (depends on your tomatoes).
  6. Microwave, covered, for another minute on high.
  7. Done!
