Ingredients:

Directions:

  1. Twist mushroom stems free then trim off dried ends and finely chop stems.
  2. In skillet over medium heat combine stems, onions, garlic, cumin, chili powder and water.
  3. Stir often until vegetables begin to brown then add 2 tablespoons water and scrape bits free.
  4. Add tomato sauce, chilies and half of the cheese.
  5. Remove from heat and gently stir in the stuffing mix.
  6. Rub mushrooms with oil then set cup side up in rectangular pan.
  7. Mound all the filling onto caps then sprinkle with remaining cheese.
  8. Bake at 400 until cheese is lightly browed about 20 minutes.
