Ingredients:

  • 1 tsp olive oil
  • 1 cup brown rice
  • 1 onion , medium
  • 1 clove garlic
  • 1/4 tsp cumin
  • 1 1/2 cups chicken broth
  • 1/2 tsp salt

Directions:

  1. Heat oil in heavy saucepan over medium heat. Stir in rice and cook about 1 minuet. Stir in onion and garlic and saute about 3 minutes, stirring frequently until onion is translucent. Stir in remaining ingredients. * Increase heat to high and bring to a boil. Reduce heat to low. Cover and simmer 20 minutes or until liquid has been absorbed and rice is tender. Let stand 5 minutes. Fluff rice and serve.
  2. *at this point put into rice steamer and steam until rice is done; about 40 minutes.
