Ingredients:

  • preheat oven at 375 degrees and bake for 25 minutes, then 350 degrees for 40 minutes.
  • 1 1/2 lb of ricotta
  • 4 eggs , beaten. (put 1/4 cup aside to be brushed on top
  • crust)
  • 3 tbsp of grated parmagano cheese
  • 2 cups of flour
  • 1/2 tsp of salt
  • 2/3 cup of butter, cut into small pieces

Directions:

  1. Remove sausage from casing and break in small pieces. Brown in pan with a little water. Drain and cool.
  2. Mix ricotta and mozzarella well. Add eggs, ham and cheese and sausage and mix thoroughly. Pour mixture into deep dish pie shell, cover with pie crust (cut slits in crust to allow steam to escape). Brush top of crust with remaining egg. bake for 25 minutes 375, then 350 degrees for 40 minutes.
  3. It is best to make the day before - to let it set -or refrigerate 4 or 5 hours before you serve -otherwise it will crumble when you slice it - serve at room temp
