Mama's Pineapple Salad

Ingredients:

  • 1 (15 oz) can crushed pineapple
  • 3/4 cup sugar
  • 1 (1/4 oz) envelope unflavored gelatin
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup pecans (optional)
  • 1 (8 oz) container cool whip

Directions:

  1. In med sauce pan mix pineapple, sugar, and gelatin. Bring to boil. Continue boiling for 5 minutes.
  2. Remove from heat and let cool for 10 minutes.
  3. Stir in softened cream cheese until cheese is melted and well mixed.
  4. Add pecans (optional)and allow to cool to room temperature.
  5. Fold in Cool Whip and refrigerate for several hours.
  6. **Best if refrigerated overnight**.
