Ingredients:

Directions:

  1. Finely grate rind from limes and then juice (you need about 1/2 cup).
  2. Place juice, eggs, sugar, butter and 1/2 rind into heatproof bowl.
  3. Place bowl over a saucepan of simmering water but donlt let the base touch the water.
  4. Stir continually for 15-20 mins until the mixture has thickened enough to coat the back of a spoon, similar to custard.
  5. If you just want this as curd, put the curd into a sterilised jar and seal.
  6. Otherwise, proceed as follows!
  7. For the pastry tarts, preheat the oven to 200degC.
  8. Cut rounds from the pastry using a 7cm wide fluted cutter.
  9. Line a 12 hole patty pan with pastry rounds.
  10. Bake for 10-12 mins until golden brown. Remove cooked rounds and repeat with remaining pastry.
  11. When cold, fill with lime curd and decorate with reserved lime rind....
