Lemon Sweet Butter Jerusalem Artichokes(Sun Chokes)

Ingredients:

  • 2 lbs artichokes , scrubbed and cut 1/4 inch rounds
  • 1 tsp salt
  • 4 quarts water
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/2 cup butter
  • 2 tsp sugar
  • 1/2 cup water

Directions:

  1. In large saucepan add salt and 4 quarts of water. Bring to boil.
  2. Add artichokes.
  3. Boil five minutes.
  4. Drain in colandar.
  5. In large frying pan, add olive oil and heat.
  6. Add drained artichokes. Saute. Turning with spatula until sides are lightly browned.
  7. Take out of pan and set aside.
  8. Add lemon juice, butter and sugar or substitute to frying pan. Gently simmer.
  9. Add 1/2 cup water, stir to mix.
  10. Add fried artichokes. Toss to cover with lemon sweet butter sauce.
  11. Cook five minutes at simmer.
