Ingredients:

  • 1 (3 1/4 oz) package lemon pie filling mix
  • 1/3 cup sugar
  • 1 cup water
  • 1 (5 1/4 oz) can apricot nectar
  • 1 (1 oz) container cool whip

Directions:

  1. Combine pudding mix, sugar, water, apricot nectar and egg.
  2. Cook and stir over med heat until thickened.
  3. Cool.
  4. Fold into cool whip and then fold in rice.
