Ingredients:

  • 1/3 cup. butter or margarine
  • 1 - 2 cup. fresh mushrooms, sliced (optional)
  • 1/4 tsp. thyme
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 cup. lemon juice
  • 1 1/3 cup. water
  • 1 3/4 cup. precooked rice

Directions:

  1. Heat butter or margarine in frying pan. Add celery, onion, and mushrooms, if you wish. Saute for 5 minutes. Add thyme, salt, pepper, lemon peel, lemon juice and water. Bring to a boil. Add rice and cover. Remove from heat and let stand 5 minutes. Toss and serve.
