Lemon Poppy Seed Cake

Ingredients:

  • 3/4 cup sugar
  • 3 tbsp cornstarch
  • 1/4 tsp salt
  • 3/4 cup water
  • 1 tbsp butter
  • 1/3 cup lemon juice
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 1/4 cup boiling water

Directions:

  1. Bake cake as directed on package in 9x13. Cool.
  2. For Filling: Mix sugar, cornstarch and salt in a small saucepan over medium heat. Add water slowly stirring constantly. Bring mixture to a boil and boil for 1 minute, remove from heat. Stir in butter and lemon juice. Mixture will thicken as it sits.
  3. For Frosting: Mix sugar, cream of tartar, vanilla and egg whites in a bowl add boiling water and beat at high speed for 5-7 minutes until fluffy.
  4. When cake and filling are cooled top the cake with the filling then frost.
  5. * Looks pretty in a glass cake pan*.
