Ingredients:

  • 4 oz couscous
  • 2 eggs
  • 200 g lemon
  • 8 g splenda

Directions:

  1. Remove zest from 2 lemons and squeeze juice.
  2. Add Splenda or Canderal (2 tablespoons.
  3. Pour boiling water over plain couscous to cover, stir and leave until water is absorbed.
  4. Puree/process cottage cheese until smooth, or use Quark. Beat in to lemon zest andjuice.
  5. Add in baking powder.
  6. Mix into couscous.
  7. Beat 2 eggs separately, mix into couscous mixture.
  8. Place in glass flan dish and smooth.
  9. Microwave on full power for 10-12 minutes, until risen and set.
  10. Eat hot or cold.
