Lemon Coconut Bars

Ingredients:

  • 2 cp flour
  • 1 cp butter
  • 4 eggs
  • 4 tbsp flour
  • 5 tbsp lemon zest 1tsp
  • 2/3cp chopped bakers coconut (chopped well)

Directions:

  1. Heat oven to 350
  2. Melt butter in 9x13inch baking dish
  3. Add flour and powdered sugar in pan and stir till blended
  4. Press mixture to entire bottom of pan with metal spoon.Go up the side a little to help hold filling
  5. Bake for 20 min
  6. Allow to cool for 20 min
  7. In bowl beat eggs and sugar until pale
  8. Add rest of ingredients
  9. Pour over crust
  10. Bake for 25min untiil lightly golden
  11. Let bars cool on cookie rack in pan completely
  12. Udst with powdered sugar
  13. Cut as big as you would like and enjoy
