Ingredients:

  • 2 cup flour
  • 4 eggs
  • 1/4 cup flour
  • 1/3 cup lemon juice
  • 1 tbsp lemon zest

Directions:

  1. Crust:
  2. Sift flour and powdered sugar together. Add softened butter and blend with mixer until crumbly. Press into a 9x13 pan lined with foil or parchment and bake at 350 degrees for 20-25 minutes.
  3. Filling:
  4. Whisk the eggs and add granulated sugar and lemon juice. Add the flour and lemon zest and mix thoroughly. Pour over the cooked crust and and bake at 350 degrees for 20 minutes.
  5. Remove from over and allow to cool slightly before sprinkling with powdered sugar.
