Directions:

  1. Preheat oven to 350F.
  2. Grease a 5'' x 9'' loaf pan and line the bottom with parchment paper.
  3. In a bowl,beat the butter, sugar and lemon zest with a wooden spoon until creamy, beat in eggs.
  4. Combine the flour, baking powder and salt in a bowl, and add to butter mixture:stir in lemon juice and milk.
  5. Mix in almonds and raisins, reserving 1 Tbsp.almonds for the top.
  6. Pour batter into prepared pan and sprinkle with reserved nuts.
  7. Bake 50 minutes, or until loaf is golden and a skewer inserted into the center comes out clean.
  8. Let cool in pan for 5 minutes, then remove to wire rack to cool completely.
