Leek, Potato and Carrot Soup

Ingredients:

  • 175 g leek
  • 1 tbsp olive oil
  • 1 clove garlic
  • 700 ml water
  • 1/4 tsp cumin
  • 175 g potato
  • 125 g carrot

Directions:

  1. Saute leek and garlic in oil for 2-3 mins.
  2. Add water (with veg stock added), cumin, and season.
  3. Add potato simmer for 10-15 mins.
  4. Add carrot, simmer 2-3 mins.
  5. Adjust seasoning.
