  1. Large Spanish onion
  2. /4 cup butter
  3. /2 cups Jiffy corn muffin mix
  4. Large egg, beaten
  5. /3 cup milk
  6. Cup grated sharp cheddar cheese
  7. Cup cream-style corn
  8. /2 teaspoon hot pepper sauce
  9. Cup sour cream
  10. /4 teaspoon salt
  11. /4 teaspoon dill weed
  12. Change Measurements: US | Metric
  13. Directions:
  14. Prep Time: 15 mins
  15. Total Time: 45 mins
  16. Preheat oven to 425 degrees.
  17. Melt the butter in medium size pan.
  18. Peel the onion and slice into 1/4 inch rings.
  19. Saute the onions in the butter until soft.
  20. Remove from heat.
  21. Combine muffin mix, egg, milk, corn and hot pepper sauce.
  22. Place in a buttered 8 inch square pan.
  23. (You can use a cooking spray) Add sour cream, salt, dill weed and 1/2 cup of the cheese to the sauted onions; combine and spread over the batter.
  24. Sprinkle with the remaining cheese.
  25. Bake for 30 minutes or until bubbly.
  26. Remove from oven and let cool for a few minutes before cutting into squares.
