Jim Thompson's Pineapple Fried Rice

Ingredients:

Directions:

  1. Heat oil in a very hot wok.
  2. Fry the garlic and salt in the butter until fragrant.
  3. Add the onion and curry powder and mix well.
  4. Add the coconut milk and shrimp and simmer for 3 minutes.
  5. Season with sugar, soy sauce and oyster sauce.
  6. Stir, then add the pineapple, raisins and rice.
  7. Reduce the heat and stir-fry for another 2 minutes mixing well.
  8. Garnish with green onion and coriander.
  9. Sprinkle with pepper to serve.
