Jeffs Wild & Tame Diabetic Berry Pie

Ingredients:

  • 1 bakeable frozen pie shell
  • 1 tbsp cornstarch
  • 1 (5/8 oz) package jello shimmering wild berry sugar-free gelatin mix

Directions:

  1. Bake and cool pie shells according to directions on the pie shell packaging.
  2. Bring soda and cornstarch to a boil, stirring constantly.
  3. Remove from heat.
  4. Add Jello and stir to dissolve.
  5. Add berries to mixture and stir until all the berries are coated.
  6. Fill pie shell and pour remaining juice over pie.
  7. Refrigerate until pie is set, about 2 - 1/2 hours.
  8. Top with conservative amount of Cool Whip if you like.
