Ingredients:

Directions:

  1. Turn the broiler to high.
  2. Mash garlic and salt into a paste.
  3. In a medium bowl combine paste with lemon juice, zest and thyme.
  4. Whisk in olive oil.
  5. Add tuna and flake with a fork.
  6. Add artichoke, onion, celery, and arugula toss.
  7. Add salt and pepper to taste.
  8. Toast muffins in broiler remove when golden.
  9. Stack tomato then tuna mixture then provolone.
  10. Return to broiler to melt cheese.
  11. Enjoy.
