  7. /3 c To 1/2 cup mayo or salad dr
  8. /2 t Salt
  9. /2 t Prepared mustard
  10. /4 t Sugar
  11. /8 t Pepper
  12. C Cooked shelled green peas *
  13. C Diced mild Cheddar or Colby
  14. - cheese
  15. Md Stalk celery - thinly sliced
  16. - (about 1/2 cup)
  17. Sweet pickles - chopped (abt
  18. - 1/4 cup)
  19. Tb Finely chopped onion
  20. Hard-cooked eggs - chopped
  21. Mix mayonnaise, salt, mustard, sugar and pepper in 2-1/2 quart bowl.
  22. Add peas, cheese, celery, pickles and onion; toss. Stir in eggs.
  23. Cover and refrigerate until chilled, at least 1 hour. Serve on
  24. Lettuce leaves, if desired. Immediately refrigerate any remaining
  25. Salad.
  26. Variation: Substitute 1 can (15 oz) kidney beans, rinsed and drained,
  27. For the fresh green peas.
  28. * 1 10-oz pkg frozen green peas, thawed and drained, can be
  29. Substituted for the fresh green peas.
  30. Nutritional info: 1 serving = 240 calories; 18g fat; 9g protein; 10g
  31. Carbohydrate; 100mg cholesterol; 500mg sodium.
