Iced Pumpkin Cookies

Ingredients:

  • 2 cups shortening
  • 2 eggs
  • 1 tsp salt
  • 2 tsp vanilla
  • 2 cups pumpkin
  • 5 cups flour
  • 2 cups sugar
  • 2 tsp cinnamon
  • 6 tbsp brown sugar
  • 6 tbsp milk

Directions:

  1. Preheat oven to 350°F.
  2. Combine all cookie ingredients, mixing well.
  3. Drop by spoonfuls on greased cookie sheets.
  4. Bake for 12-15 minutes, or until they test done to the poke test.
  5. While the first batch is baking, combine the icing ingredients and mix well.
  6. As each batch comes out, let rest for a few minutes until set and then move to a drying rack.
  7. Ice while still warm.
