Hot Italian Sausage Casserole

Directions:

  1. Cook sausages in a frying pan until almost done. Remove from heat, drain fat and slice each sausage on the diagonal.
  2. Meanwhile, in a pot of boiling water, cook pasta until tender but firm. Drain and set aside.
  3. While pasta and sausages are cooking, saute onions, celery and green pepper until tender.
  4. Add vegetable mixture to sliced sausage mixture, add tomato paste, basil and pepper flakes, mix well. Cook covered over low heat until heated through.
  5. Put noodles and sausage mixture in a large casserole dish or small roasting pan and combine. Fold in mozzarella cheese.
  6. Sprinkle parmesan cheese over top, and place in preheated 350F oven, covered, for 30 minutes or until hot and bubbly.
