Homemade Mayonnaise

Ingredients:

  • 1 1/4 cups vegetable oil
  • 1 tbsp lemon juice , to taste
  • 1/2 tsp cayenne
  • 1 tsp salt

Directions:

  1. In the bowl of a food processor, crack the egg and the 2 egg yolks.
  2. Run the machine about 30 seconds and slowly (I mean slowly) drizzle the oil in, while running.
  3. Stop the machine (the mixture should be of normal mayonnaise consistency).
  4. Add the mustard, lemon juice, salt and pepper.
  5. Whiz again until mixed.
  6. Taste.
  7. Adjust.
  8. Remember these flavors will improve upon sitting and refrigeration.
