  1. -Place each shortbread cookie in cup of a greased
  2. Muffin tin.
  3. -In 2-quart saucepan over medium-low heat, combine
  4. Butter, sugar and corn syrup. Heat to a full boil,
  5. Stirring constantly with a wooden spoon. Boil 3
  6. Minutes, stirring constantly.
  7. -Slowly pour in sweetened condensed milk, stirring
  8. Constantly.
  9. -Continue cooking over low heat until candy
  10. Thermometer reaches 220-
  11. 228 degrees. Remove from heat.
  12. -Stir in vanilla. Beat until creamy.
  13. -Immediately stir in toasted coconut and mix well.
  14. -Spoon mixture by teaspoonfuls over shortbread cookies.
  15. -Cool completely.
  16. -Remove cooled cookies from muffin tin onto waxed paper.
  17. -Melt chocolate chips and drizzle thinly in stripes over cookies and let chocolate harden at room temperature
  18. -Store in airtight container.
