Ingredients:

Directions:

  1. Gather 1 lb.
  2. Of fresh heather.
  3. Use the upper stalks and flowers only.
  4. Boil the heather with a gallon of water in a large stockpot until the mixture resembles a dark tea.
  5. If needed, add more stalks and flowers if the colour is weak.
  6. The mixture should be opaque.
  7. Remove from heat and strain.
  8. Discard the heather.
  9. Allow it to cool.
  10. Once it has cooled completely, add sugar, nutmeg, allspice and lemon juice.
  11. Pour the new mixture into casks or bottles.
  12. Serve chilled.
