Healthy Chocolate Goodness Cookies

Ingredients:

  • 1 1/2 cups whole wheat flour (whole wheat pastry flour works best because its ground fine, could use part soy flour or other kinds)
  • 1/2 cup quick oats
  • 1/3 cup butter
  • 1 cup flax seed meal (if you want butter-free- add another 1/2 cup of flax meal)
  • 3/4 cup cocoa powder
  • 1/2 cup dried coconut
  • 1/3 cup peanut butter
  • 2 tsp vanilla
  • 3 tsp egg substitute , 4 tab of water (or 2 eggs)
  • 1 1/2 cups water (slowly add until right consistency)

Directions:

  1. Prehead oven to 350. Add all dry ingredients first and mix well.
  2. Then add wet ingredients and mix with mixer until cookie doug consistency. Drop small dough ball about 1inch or so on a cookie sheet. Cook for about 10 minute Let sit on sheet to cool for a minute Put on cookie rack to cool.
