Ingredients:

Directions:

  1. You will also need: 22 qt size pot needed.
  2. In the pot, fill up half way with water.
  3. Remove fat from ham and cut up.
  4. Bring water to rolling boil.
  5. Cook ham till tender (about 1 hr).
  6. Add potatoes, onions, and tomatoes.
  7. Bring back to boil.
  8. Cook 10 minutes.
  9. Check for salt needed, and add as desired.
  10. Keep in mind ham is salty too.
  11. Add around 1/8 cup pepper.
  12. Add rice.
  13. Cook covered for 20-25 minutes till rice is done.
  14. On low heat, check again for salt flavor.
  15. You may add more water if needed.
